Shoofly Pie

Ingredients:
Pastry for one crust 
3/4 cup flour 
1/2 cup packed brown sugar 
3 tablespoons margarine or butter 
1/2 teaspoon salt 
1/2 teaspoon ground cinnamon 
1/4 teaspoon ground ginger 
1/8 teaspoon ground nutmeg
3/4 cup hot water 
1/2 teaspoon baking soda 
1/2 cup dark molasses 
1 egg yolk, beaten well
optionally you can use walnuts or pecans to taste

Directions:

Prepare the oven by heating to 400 degrees F.

Prepare pastry for the pie, this recipe is only for what goes into the pie so use your favorite pie crust recipe. I like using a grahamcracker pie crust cuz it's easy to use an tastes good too.

Make a Crumbly mixture by:
Mixing flour, brown sugar, nutmeg, salt, cinnamon, ginger and butter with your hands until crumbly.

Mix hot water and baking soda in small separate bowl, then stir in the molasses and a well beaten egg yolk.

Pour this mixture into the crust-lined pie plate then sprinkle the crumbly mixture evenly over the top of this.
Optionally you may sprinkle walnuts or pecans to top of mixture

Bake for 15 minutes at 400 degrees F. Reduce oven temperature to 325 degrees F and bake about 20 minutes or until brown. 

Serve warm. 
May be served plain or with a ice cream or whipped cream topping.
For extra richness, topping may be topped with chocolate syrup and a cherry.
