| Yankee Pot Roast
3 to 4 lbs beef roast
2 tsp salt
1/2 tsp pepper
1/4 lb bacon
1 15oz. can tomato sauce
1 cup water
1 bay leaf
8 to 10 small onions
8 to 10 small carrots
1/2 cup vinegar
Fry bacon in Dutch oven. Rub roast with salt and pepper.
Brown on all sides in hot Dutch oven.
Add bay leaf, vinegar and 1/2 cup water
Cover and cook 1 1/2 to 2 hours.
Add veggies, tomato sauce and rest of water.
Cook for about 1 hour more.
Don't let the Rebs know you are cooking this or they'll shoot ya for
just
calling it Yankee.
